We love roasted green chiles around here... Tim loves making green chili salsa, and I love putting them in chili beans, enchiladas and such. One of Tim's favorite things is the green chili burro from Someburros - so I decided to try and make it at home... they were pretty dang good so I thought I would share the recipe!
Its super easy to make roasted green chiles... Just throw them on the grill until they get a good char (or in the oven), place them in a ziplock baggie to steam (this loosens the skin), then pull them out, peel the skins off, remove the seeds, and chop them up! Easy and SO good! From this point you can do lots of things with them, this time I made green chili burritos!
Season a boneless beef roast with about 3 tsp chili powder, 2 tsp ground cumin, salt and pepper. Place in a crock pot with 4 roasted green chile's, 1 chopped onion, 3 peeled garlic cloves & 2 beef bouillon cubes. Put in just enough water to cover, and cook on low at least 8 hours. Remove beef and pull apart with forks. Skim fat from liquid and blend. Place everything back in the crock pot, along with an additional chopped green chili (or 2), and its redy to go :) We had ours in yummy tortillas with a dollop of guacamole and pico!
